Mango Friands MAKES 12 • 4 egg whites • 1 cup (150g) icing sugar mixture • 2 cups (340g) almond meal • 200g tub mango yoghurt Preheat oven to 180°C. Use an electric beater to whisk egg whites in a large, clean, dry bowl until peaks form. Gently stir through icing sugar and almond meal until just combined. Fold through yoghurt and spoon mixture evenly into paper lined friand holes. Bake for 25 minutes or until cooked. Set aside for 2 minutes. Turn out onto a wire rack to cool. Optional: Change the flavour by changing the yoghurt.

Cumin • ½ tsp. ground coriander • 3 tbs. finely chopped fresh cucumber Mix together yoghurt and spices. Stir in cucumber and serve with pappadums or as a topper on Indian mains. Olive Tapenade MAKES 1¾ CUPS • 3 cups kalamata olives, drained • 8 anchovies • 3 tbs. freshly chopped parsley • 3 tbs. (45ml) garlic infused olive oil Place all ingredients in a food processor and puree. Season with pepper. Chill prior to serving. Pea & Mint Dip MAKES 1 CUP Recipe by Michelle Ashdown. • ½ cup peas • 4–5 small mint leaves • 1 tbs.

(15ml) cider vinegar Place all the ingredients into a food processor and blend until smooth.
